Typical Duck Dishes of the Archipelago

Indonesia is known for its rich crops and diverse culture. This can be seen from the various processed foods that are unique to their respective regions, including processed duck. There are various types of processed duck that are appetizing and must be tried for you duck fans. Here are some of them:

  • Duck Ireng
    As the name implies, this duck dish has a dark and black appearance. Duck ireng is a typical Madurese duck dish that is cooked until the color turns black. When served, the ireng duck meat will be easily removed from the bones, the texture is soft and the taste is savory.

  • Songkem duck
    This duck dish is considered healthier, because it is cooked without oil, which is only steamed with banana leaves. The meat is tender and the spicy seasoning penetrates to the bone. The word songkem itself comes from the Madurese language which means “prostrate”. If you pay attention, songkem duck, which uses a whole duck, needs to be folded in such a way that the duck's head bows as if it is prostrating.

    Itiak lado mudo comes from the Minang language which means “green chili duck”, as the name implies, this duck preparation is cooked with very spicy green chili. It uses young duck meat cooked with green chili seasoning and topped with chopped fresh cucumber and shallots.

    Sie itek is a duck dish with a thick coconut milk sauce like curry or gulai with a very distinctive aroma of spices. There are two varieties of this Acehnese dish, white and brownish red. White sie itek is not spicy but tends to highlight the flavor of candlenut, while red sie itek has a spicy taste because it uses chili and pepper.
